Seasonal vegetables…grow your own


Why eat seasonal vegetables? eating seaonally cuts down on food miles, encourages local farmers to sell to their own community, the food is fresher and healthier because of it’s short journey to the plate.

Reconnecting with nature’s cycles is very grounding, we receive fresher food which has more flavour and more nutrition; as it’s not be in cold storage for months. This month in season are beetroot, Brussels sprouts, celery, Jerusalem artichoke, kale, leeks, shallots and turnips to name but a few…find your nearest farmers market.

Not sure how to cook them?  Soup is great way of getting lots of vegetables into your diet, the basic formula for soup is:

  • 1 roughly sliced/chopped onion, gently fried until soft, do not brown
  • Any vegetables like carrots, leeks, potatoes, celery can all be added, just chop them up and throw them into the saucepan with the onions, sweat for 10 minutes
  • 1 Pint of vegetable stock (or chicken) add the stock, cook until everything is soft and then liquidise or blend until smooth.  Add salt and pepper, a teaspoon of plain live yoghurt and a sprig of herb to serve.   It’s easy…
